I mean, it seems too good to be true that there is a whole calendar day dedicated to the consumption of them. And yet, in a mere 24 hours it'll be here. Yes sir, yes it will.
Impatient pancake consumer that I am, I got my scoffing sampling in yesterday. This wasn't totally for glutinous reasons - although as reasons go I'm happy to fall guilty of that too - but no, this week I'm back on set and so wont be around my family - traditionally my pancake day companions - this Tuesday. Insofacto the early pancake situation? Totally necessary.
Tomorrow is the official big day and so for those of you who are planning on rustling up a 2D treat, I've hunted down 5 awesome pancake recipes to give a whirl.

I actually mis-read the title of this recipe as Classic Diner Pancakes. If anything'll get me excited it's Diner pancakes. Here's a little un-fashiony fact: when I attended my first NYFW last September, Ols and I ended up at a Yellow Card gig. Following on from some of the most fun hours ever we headed to a 24hr Diner in the early hours of the morning and I devoured a whole stack of Diner pancakes laced with maple syrup and bacon. This was my favourite night from our entire trip. The pancakes were totally up there with great life meals. This recipe from A Pinch Of Yum looks similarly delicious, I whole heartedly advocate that you try bacon and maple syrup as pancake partners in crime.

Banana Almond Pancakes with Pear and Raspberry Compote on A House In The Hills
Healthy pancakes! They exist peeps and they look so good. These vegan, sugar and gluten free babes come with a pear and raspberry compote recipe too. Drrream. Raspberries are my favourite fruit ever and pears rank high too. My sister will be visiting this weekend and since she sticks to a gluten free diet I am thinking that we may just have to make a batch together. Do you guys have any recommendations on what we could use instead of almond meal? My sis is allergic to nuts too so we will be vetoing that ingredient. Either way we'll figure it out! I love to read the streams of consciousness of other bloggers, it reminds me that my own rabbit warrens of thought are not so unusual. These crepes look most similar to the type which I ate growing up.
