COOKING WITH LE PRINCE #7
cocktail estivi alla frutta

TAKE ME TO THE SEA
Ingredients:
1 watermelon
3 ripe and juicy peaches
500 ml white wine
Ice & Sugar to taste

Method:
Cut the watermelon rind and dig the pulp; cut off a small part of the bottom to create a flat base on which the watermelon can be laid. Take a large bowl and put a colander inside it; rub the pulp in the colander to extract only the juice without the seeds.
Mix the watermelon juice with white wine and add sugar to taste.
Cut the peaches making thick slices and add them to the punch. Leave the punch in the fridge for a couple of hours.
Meanwhile, garnish the watermelon with peaches, slices of watermelon or your favourite fruits.
Pour the cocktail into the watermelon and add some ice cubes. CHEERS!

Recommendations:
To not water down the cocktail, you can use frozen watermelon cubes, instead of ice cubes. Do not forget to surprise your guests: be creative with the cubes shape - in this case I used moose shaped cubes!
If you want your cocktail to be more refreshing, use lemon instead of peaches.

PORTAMI AL MARE
Ingredienti:
un'anguria
3 pesche mature e succose
500 ml di vino bianco
ghiaccio qb
zucchero qb

Procedimento:

Consigli:

COOKING WITH LE PRINCE #6

DISHWASHER'S KING PRAWNS
This easy recipe proposes an Ecofriendly dish, since it is cooked using the heat created during a dishwasher washing-up. Besides using an alternative power source, it features all the advantages of low temperature cooking, maintaining flavour and smell intact.

Ingredients for 1 jar - 2 servings:
4 Argentinian king prawns
1 glass jar with hermetical seal and resistant to heat, 1/2 l of capacity (those for jams are perfect)
Extra virgin oil
80ml dry white wine
1 teaspoon of mustard
Black pepper, salt, oregano, nutmeg
1 small chili pepper
Citron peel
Aromatic vinegar

Method:
Shell the prawns (if you prefer, you can leave the shells or buy already shell-off prawns).
Put all the ingredients into the glass jar, except for the aromatic vinegar; add spices and salt to taste. Seal it well and shake to season the prawns.
Load the dishwasher as you usually do, and add the jar. Select a complete program to 70°C. It will last 2 hours approximately, so in the meantime enjoy a film or a book, or keep up with #TEB latest news.
When the washing-up is done, lay the table and take the jar from the dishwasher (be careful it will be hot!); open it and pull out the prawns with a fork.
Lay the prawns on a dish and season with aromatic vinegar. Unexpected, isn't it?

Recommendations:
Pay specific attention to the jar top: it must be sealed to prevent water, filth or soap from entering; if you unsure, put the jar into a bag for frozen food and close with a knot - in this way, it will be 100% sealed.
Always use only this amount of ingredients for each jar: if you fill the jar too much, the prawns may not cook well. For more servings, prepare more singular jars.

Italian version:
GAMBERONI LAVATI E PROFUMATI

olio extra vergine
80ml vino bianco secco
un cucchiaino di senape
sale, pepe nero, origano, noce moscata
un peperoncino piccolo
scorza di cedro
aceto balsamico

Procedimento:
Sorprendente, no?

Consigli:

COOKING WITH LE PRINCE #5
ricette romantiche

"ROSEOTTO": RISOTTO WITH ROSES
Ingredients for 4 servings:
250 g of rice
Extra virgin olive oil
Butter
Parmesan cheese
1l veg stock
White wine
100 ml rose water for cooking
2 tablespoons of ricotta
1 red rose
Basil, rosemary, pepper and salt

Method:
Mince the red rose petals and leave aside. In a pan melt a knob of butter with a splash of olive oil; then add the rice and roast it for a couple of minutes. Simmer with white wine and cook pouring the veg stock little by little to keep the rice creamy. Be careful: during the cooking, keep pouring the stock and mix to prevent the rice to stick. When the mix starts to reduce add more stock. Continue in this way for approximately 16 minutes. Then pour the rose water and cook for 2 minutes more. The rice must be al dente.
When the rice is almost cooked through, cream it with Parmesan cheese, a knob of butter and 2 tablespoons of ricotta.
Take the pan off the heat and add the minced rose; mix well and serve right away. Season the dish to taste with aromatic, a sprinkle of pepper and, if you like, some fresh rose petals. Ta-da!

Recommendations:
A key point of this recipe is the choice of the roses: all roses are edible, but use only those not treated with chemicals. You will get the best results choosing very perfumed roses such as Tea roses or roses with intense coloring such as Black Baccara.
Always use rose water for cooking not the beauty one: you can find it at well-provided supermarkets among dessert flavouring or ethnic products.
Instead of white wine, you can simmer with red wine to intensify the sour taste and enhance the rose hues of the risotto.

Italian version:
"ROSOTTO": IL RISOTTO ALLE ROSE
Ingredienti per 4 persone:
250 g di riso per risotti
olio extra vergine d'oliva
burro
Parmigiano reggiano
1 l brodo vegetale
vino bianco
100 ml acqua di rose
2 cucchiai ricotta
1 rosa rossa
basilico, rosmarino, sale, pepe

Procedimento:

COOKING WITH LE PRINCE: Gateau Battu

I found this recipe on a beautiful recipe book from Provence.
I oddly flipped through it backwards, from the last page to the first one, and when I bumped into this gateau, I told myself: " I definetely want to cook it!"
A sweet trip to France: here is today's special by Le Prince!

COOKING WITH LE PRINCE #4
GATEAU BATTU
Ingredients:
500g Manitoba flour (strong flour)
180g butter
4 egg yolks
150g sugar
A pinch of salt
30g brewer's yeast
1/2 vanilla bean
100g warm milk
Icing sugar to taste

Dissolve the yeast in the milk. Then add the yolks and a pinch of salt and whisk the mix well. Pour the flour into a wide bowl; make a hole in the middle and pour the sugar into it. Take out the seeds form half of a vanilla bean, cutting it uprightly and extracting the pulp with the spine of the knife; then add it to the sugar. Pour the mix of milk and eggs onto the sugar. Knead with your hands or use a mixer at minimum speed, till the dough is dry and easy to detach from the inside of the bowl. Make a ball and let it rest for 10 minutes.
In the meantime, abundantly butter a high mould with a hole at its centre. With your fingers, create a hole in the middle of the dough and lay it down in the mould. Let it rise warmly till it will double its volume. According to your oven, cook at 160°C for 30 minutes approximately: the gateau has to be well coloured. Before taking it out of the mould, let it cool almost completely. Dust with icing sugar and voilà!

COOKING WITH LE PRINCE: Easter Bunny-to

Are you ready to kiss winter goodbye and welcome spring with joy?
Then we agree on something.
#TEB's kitchen royalty is back with a fresh new dish for the upcoming spring season, just in time for Easter: let's discover today's special by Le Prince!

COOKING WITH LE PRINCE #3
cosa portare ad un pic nic

EASTER BUNNY-TO
Ingredients for 2 servings:
For the burritos: 200g soft wheat flour, 100g water, salt.
For the yogurt sauce: 125ml yogurt, half lemon, dill, pepper and salt.
For scrambled eggs: 3 eggs, extra virgin olive oil, pepper and salt, nutmeg, sweet paprika.
For the filling: prosciutto, mixed salad, carrots, fresh goat cheese.

Method:
For the burritos: knead the flour with water and salt. Divide the dough into 3 equal round parts. When the dough has rested for 15 minutes, flour very well the table and roll the 3 parts till obtaining thin disks; riddle the burriots with holes using a fork. Heat a large pan over high flame and cook the disks on both sides for a couple of minutes, till they start to make bubble and to brown. Set aside.
For the yogurt sauce: in a bowl mix the yogurt with the filtered juice of half a lemon; season with pepper and salt as desired and add a fresh dill sprig coarsely chopped. If you cannot find fresh dill, use the dried one: in this case, take a pinch and grind it down with your fingers. Set aside in the fridge.
For the eggs: add a dash of oil in a pan and put it on a heat. When it is well heated, crack open 3 eggs cleanly and season with pepper and salt as desired. When the eggs are almost cooked, break them with a wood spatula and scramble them. To add an unusual taste, finish with a sprinkle of paprika.
To serve: take a burrito and spread a spoonful of fresh goat cheese on it; add some mixed salad and julienne carrots. Lay a couple of prosciutto slices, then add the scrambled eggs and dress with your yogurt sauce as desired. Wrap it up and serve. Ta-da!

Recommendations:
This recipe is ideal for a picnic: once your burritos are ready, wrap them in a colourful napkin and then in the shrink wrap. Put them in a basket or in a backpack and get on the bike!
Goat cheese is slightly sour and gives a taste of freshness and lightness; if you do not like it, you can use other kinds of soft cheese: gorgonzola, ricotta, crescenza, Philadelphia cream cheese and so on.

Italian Version:
EASTER BUNNY-TO

Christmas Fare | Tredwell's London

Ciao bellissimas! Happy Friday!

I am particularly looking forward to this weekend as this week has totally been one of those. I've really struggled to shake a bout of post-holiday fogginess, and I can't wait to get away this weekend (we're going to the beach!) and regroup.

Despite the foggy brain, this week has been peppered with lovely events. Yesterday my blogging agency WaR Network laid on a feast for our WaR family at Tredwell's restaurant on Upper St Martin's Lane. Given that as bloggers we generally work alone, it was so nice to have a proper Christmas party! We were treated to the most delicious food, and I got to catch up with some of my favourite blogging friends.
Opened earlier this year, Tredwell's is the third London restaurant of Michelin starred chef Marcus Wareing. Marcus so kindly took the time to talk to us all at the lunch yesterday, and him and I got in to conversation about the striking custom made clock the restaurant boasts. Marcus explained that he had wanted to design a wall with knives lodged in and the handles showing, but that for health and safety reasons (naturally) his design team had advised that they create a piece of artwork using knives instead. The result is brilliant - a photo opportunity favourite amongst the lunch's attendees yesterday!
For those of you that love a menu snoop, here's what we ate:

Down the apples & pears (delicious vodka infused cocktails)

Harissa-glazed aubergine, peanuts, coriander, chilli
Chricken liver mousse, bacon jam, toast
Pulled  pork belly, ginger & apple slider

Sea bass, carrot, lentils, crispy shallots
Lamb chops, minted bean chutney,
Gnocchi, cauliflower, sprouts, hazelnuts & Berkswell cheese
Sweet potato chips, BBQ mayo
Kale slaw

Salted caramel ice cream
Warm ginger cake, caramel, cream

Such was the lovely leisurely pace of our lunch, I had to dash before dessert to a meeting. Boo! And yes my heart broke to have missed the salted caramel ice cream.
If you too are in an industry where you largely work alone, I highly suggest getting together with people in the same field and instigating a Christmas party! Not only is it lovely to celebrate the season, but it is a great way to network, and get to know new friends.

Tredwell's is definitely being added to my list of preferred central London eateries. The location of Tredwell's is great, food and drinks are yum, and despite yesterday being catered for, I've done the research, and the pricing is good too!

Do you have your Christmas party coming up? Are you looking forward to it?!

Have an awesome weekend guys!

Love,

P.S. I am in this week's LOOK magazine in a special shoot with New Look! You can pick up a copy until Monday - it's one of my favourite shoots to date!
